DIY PRETTY PINK DOUGHNUTS

We don't know about you guys, but we sure have a lot of left over easter eggs from the weekend here at LENZO HQ. Sometimes it can be a little too sickly to munch your way through the chocolate stack, so we love to find new ways to have fun with our leftovers!

With that, we bring you this super cute doughnut recipe from the lovely Lauren Kelp.  These are the epitome of #tooprettytoeat when decorated with stunning edible blooms and Easter eggs as seen here! Over to you Lauren...

WHAT YOU WILL NEED

For the doughnuts...

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 1/2 cup unswettened almond milk
  • 1/2 teaspoon white vinegar
  • 1/2 teaspoon pure vanilla extract
  • 1 egg
  • 4 tablespoons butter
  • 1/4 teaspoon salt
  • Coconut flakes, sprinkles, edible flowers – whatever you want to decorate with!

For the icing...

  • Food coloring - LENZO suggests go pink or go home ;)
  • 2 tablespoons unswettened almond milk
  • 1/2 teaspoon pure vanilla extract
  • 2 cups powdered sugar

METHOD

  1. Preheat oven to 180 degrees celsius. In a large mixing bowl, combine the flour, sugar, baking powder, salt, and cinnamon.

  2. Grab a small saucepan & combine the unsweetened almond milk, white vinegar, vanilla extract, egg, and butter over medium heat. Whisk gently until everything is combined into a sauce + pour into dry mixture and stir until smooth.

  3. Pour the mixture into a doughnut pan & bake for 10-15 minutes. Remove + place on a wire rack to cool.

  4. While you wait for your doughnuts to cool, it’s time to start preparing the icing. In a medium mixing bowl, combine the powdered sugar, unsweetened almond milk, and vanilla extract. Mix until nice + smooth, and add your desired colour to the mix.

  5. Place a paper towel under your wire rack, put the donuts on the wire rack, and glaze away!
